Mexican Chicken and Rice


Boil 2lbs boneless, skinless chicken in water with olive oil, salt and pepper. When done take out chicken. Add 1 can tomato sauce to chicken broth. Add onions or onion powder, minced garlic or garlic powder, chicken bullion to taste( low sodium is best), jalapeño pepper slices and some juice, taco seasoning and or cumin powder to broth/ sauce mixture and bring to boil. While that is boiling, shred or mince the chicken. Return chicken to broth mixture and simmer for 10/15 minutes. The longer the better! Remove chicken with ladle or strain broth into jar. Place chicken in bottom of greased/sprayed 9 x14 casserole dish . Add 1 cup brown uncooked rice. Too with 2 cups of broth mixture. Place in oven. Bake for 45 minutes. Remove and top wit shredded cheese. Return to oven and bake 20 more minutes. Remove and cool to serve.
